The other night I was preparing for a little dinner party I was having until I realized one of my guests was allergic to nuts which made me change my entire game plan. My first course was loaded with nuts so I found a quick little recipe that was easy, healthy and all the guests really enjoyed it. Here it is, don’t let the name fool you. use a fork and knife!
Open Faced Sandwich w/ arugula Goat cheese and a fried egg
- 4 (2-ounce) slices fresh Italian bread (or whole wheat)
2 cups arugula
Salt and fresh black pepper
2 tsp lemon juice (preferably fresh squeezed)
4 large eggs
3/4 cup Goat cheese (easily spreadable)
1/4 cup grated Parmigiano-Reggiano cheese
1 tsp fresh thyme
1.) Pre-heat the oven to 375. In a large oven pan place the slices of bread flat and drizzle some olive oil lightly on top of each piece. then place in oven for about 2 minutes. (keep oven on till end)
2.) while bread is in oven in a large mixing bowl combine the arugula, lemon juice, lightly sprinkle salt (about 1/8 teaspoon) and pepper (1/4 teaspoon). Then mix gently.
3.) Remove bread from oven and put aside
4.) In a large pan on medium heat place 2 teaspoons olive oil and crack eggs, try to keep them separate and not break the yolk…for better results and a fine tuned presentation try using round cookie cutouts or circle ramicans. which you can place directly on the pan and crack the egg inside to keep it perfectly circular.
5.) Cook until whites of eggs are set and remove from heat (Some people like their egg yolks runny, some do not so be sure to ask for a preference if you can)
6.) on your bread slices, spread the goat cheese with a pinch of thyme, salt, pepper and Parmigiano cheese on each slice…Next throw back in oven for 1 minute to make warm.
7.) Remove bread from oven and divide arugula salad evenly amongst each slice, Then top with egg.
8.) Serve and Enjoy!
* optional: if you feel like trying something new maybe drizzle a little balsamic vinegar across the top of each piece.
