This recipe has been in the family for quite some time, ever since I was a little boy I can always remember this meal being one of the healthiest pasta dishes i grew up on. When your little, you spend most of your meal time hiding your vegetables under the mashed potatoes or begging for mac n cheese. Not me, I would get a wooden spoon to the ass if I refused to eat my dinner regardless of what it was. However, now that i am older, handsomer and wiser I have learned to love eating healthy and this recipe is a perfect example of that. Not only is it good for you but it tastes great!
So here is to all you ladies that go to the gym every day and are scared to eat anything but yogurt and salad:
Farfalle con cavolfiore: (Farfalle pasta with cauliflower)
Serving size: 4-5 People
- 4-5 cloves garlic
- 1 large head of cauliflower
- 1/4 cup olive oil
- 1 1/2 pound of Farfalle pasta (smaller pastas work best)
- Handful fresh basil
- 1 large pot filled halfway with water (this pot needs to fit the whole cauliflower and the pasta)
- salt and pepper
- 1-2 tbsp red pepper flakes
First you should always wash your fruits and vegetables to get rid of any pesticides that are used in the growing process. Make sure you wash your cauliflower and basil. Put your large pot on a high heat with water until it begins to boil then add your salt and the whole head of cauliflower (roughly for every 4 cups of water add a tbsp of salt). Cook for 12-15 min until cauliflower cooks through and becomes soft.
while cauliflower cooks, chop your garlic to prepare for sautee’
A minute before the cauliflower is done put a large sauce pan on low heat and sautee’ your garlic, red pepper flakes and olive oil. with a slotted spoon remove the cauliflower from the pot and place it in the sautee pan (*Important: Do not throw out water after removing your Cauliflower). With your slotted spoon begin crushing up the cauliflower, for it should fall apart very easily if cooked properly. Sautee’ all ingredients for 5-7 min on medium to low heat (be sure not to burn your garlic).
With a measuring cup take 4 cups of the water you used to cook the cauliflower and add it to the pan with all your ingredients. Finally, chop your basil and add it to your sautee’ putting your burner on simmer. constantly stir! salt and pepper to taste.
In the pot you cooked the cauliflower in, return the remaining water to a boil and add your pasta.
When pasta is done spoon a couple ladels of sauce onto each bowl and it is time to serve!
